A wet ceiling is a warning sign that water is coming from somewhere above: a roof, an attic AC unit, a bathroom upstairs, or a plumbing line. The stain is just where the water finally reached the surface. Above the drywall, insulation can be saturated, wood framing can be wet, and wiring or fixtures can be at risk.

Why this is different in Florida
Many Florida homes have textured ceilings, popcorn ceilings, or ceilings with attic air handlers above them, all of which add complexity.
